Use finely blanched almond flour. Do not use almond meal. In addition, do not try to make homemade almond flour.
Coconut flour is an absorbent flour. When combined with almond flour, it gives these cookies the perfect texture.
Two eggs help hold these cookies together. We have not tried using an egg substitute, but typically unsweetened applesauce works well. For each egg, use 1/4 cup unsweetened applesauce instead. So, for this recipe, use 1/2 cup of applesauce.
Coconut oil is a healthy baking fat. Use slightly softened coconut oil. Do not melt.
Baking soda helps these cookies remain thick and tall.
Vanilla extract adds a cozy homemade flavor.
Coconut sugar helps naturally sweeten these cookies. Brown sugar is a viable substitute, but we try to limit processed sugars. In addition, brown sugar is not considered Paleo.
Lastly, dark chocolate chips or chunks add the best flavor! Look for naturally sweetened chocolate.
Sprinkle sea salt on top after baking if desired.
