We’ve been spending a lot of time outdoors this summer, which I love, but that also means we’ve been needing more meal ideas that we can eat in the wilderness! Even if you’re not an outdoorsy type of person though, foil packets, like these Chicken Fajita Foil Packets, are a great make-ahead meal that you can cook in your oven at home … or your backyard fire pit!

This was AMAZING! Everything, including the chicken, was so tender, and my 3-year-old loved it!

I LOVE a make-ahead meal come dinner time … always thanking my “earlier self” for getting all of the work out of the way ahead of time so I can enjoy the evening! And the cleanup for this one is so minimal you’ll really be happy you made things so easy.

Is Cooking with Aluminum Foil Safe?

I get this question every time I post a foil packet recipe. For those who are concerned, I would suggest placing a layer of parchment paper between your food and the foil before cooking. For those interested in learning more about why we think it’s okay to occasionally cook with foil you may find this scientific article helpful.

Can You Cook Foil Packets in the Oven?

Yes! You don’t need a campfire or grill to enjoy these, or any other variations, Chicken Fajita Foil Packets. Easily cook these in the oven at 400 degrees F. for about 30-40 minutes, or until the chicken is cooked all the way through.

Our Outdoor Camping Adventures

We recently enjoyed these Chicken Fajita Foil Packets on a paddle camping trip with the girls and their friends. It was a 24-hour iPhone free adventure with four teens who all did a great job paddling down the river with us!

We packed everything up that we’d need for two days and one night and made our way to a boat-in-only campsite that’s one of our favorite places in NC. All four kids slept in hammocks in the trees (with bug nets around them) and truly had a blast on the trip!

I was a little nervous about feeding four hungry teenagers, but it ended up working out just fine with all the extra snacks and filling foods we brought.

And here’s how I made those dinner packets that everyone gobbled down. I’ll be making these again for sure … super easy, filling, and good!

I thought cooking in aluminum was toxic. It accumulates in the brain. We had to replace all our cookware made of aluminum 20 years ago.
Do you have an alternative to aluminum foil?
    Thank you

  2. I can’t wait to try this. Can you send a picture of the packets opened before you sealed them? You were very specific with the directions, but a picture is always helpful! Thank you!

    1. Yes, either in bite-size pieces that you could easily fit in a tortilla if you’ll be assembling them that way. – Nicole
