This recipe is another one of those that I like to call “flexible.” Even though we used bell peppers and mushrooms you could really throw in (or leave out) whatever you want into the mix. We are trying to be “flexitarians” so we didn’t include meat, but I am sure it would be great to add a breast of chicken or flank steak as well. I hope you enjoy these Fajitas as much as we do!

I love a lot of different foods, but let me tell you that this fajita recipe is right up there at the top. This is the kind of meal where you hear my husband and I “mmmming” and “aaahhhhing” at how good the flavor is the whole time we are eating.

Anytime you cook with the freshest ingredients it is hard to go wrong, but I especially think the homemade tortillas are a big part of what makes this recipe so money. If you don’t want to invest the time to make the tortillas, then I think store-bought corn tortillas are the best alternative. Unless you have a local bakery, it is really hard to find whole-wheat breads or tortillas from the grocery store without a bunch of junk in them. I did once try Ezekiel flour tortillas (which are made with sprouted grains and kept frozen at Earth Fare), and even though the ingredients were decent I didn’t feel the same way about the taste.

  2. Hello! I am having a VERY hard time finding a salsa with fewer than five ingredients, as all the best salsas are packed with veggies and heat. I COULD make my own, but its quite honestly never as flavorful.

    Assuming I go with a salsa that is a). all real food ingredients, b). no sugar or sweeteners, and c). no phantom “natural flavors”, is that an exception to the 5-or-less rule? For example, several of the Frontera and Paul Newman salsas are just delicious and seem to fit this criteria.

    My ‘meat loving’ husband was weary of these and I am glad to say they were well received! Even my daughter ate them. They are well seasoned so you won’t miss adding meat!

    I used veggie pasta instead of whole wheat but my kids loved this and ask for it often. I usually bake a mac n cheese like this, but this works straight from the stove top… so easy and delicious!

  6. I’ve made these a number of times now. We use sweet peppers in place of the the other peppers and add chicken. We love this recipe!

  7. These are sooooo good! My two year olds each had seconds! Has anyone tried freezing the veggies once cooked then just reheating for dinner another day?

      Hi there. You can freeze them, but the result is a bit of a change in the cooked veggie’s texture. They still taste great. I usually try to use them in something the next day. ~Amy

    We just made this last night, and it was so good! At first my husband looked at the fajita filling and was like “uhm, is that seasoned?”. And then he took a bite and was like “WOW THIS IS SO GOOD.” And coming from him, the pickiest eater in the world, that means a lot!! The “sauce” for this is perfect and the lime really gives it a fresh taste. We did add some strips of already-cooked chicken breast (Mr. Picky Eater is not a fan of mushrooms) and it was a supremely satisfying meal. Definitely making this one a lot!!

  9. Just made this tonight and both the fajitas and homemade tortillas were amazing! Totally going to make them again. My only suggestion is to brown the onion, then add the bell peppers. It just took a long time.

  10. Made these last night for dinner and they turned out great. Hubby loved them as well, even after he realized they were meatless :) They did take a bit of time, especially when making the tortillas as well; but was worth it, especially after getting enough tortillas for 2 dinners and 2 lunches.

I have been trying to get my family to eat these foods for such a long time and all it took was the right recipe!! :) I did find this site for the Emeril’s Essence to make at home and that’s what we used (I had no clue what this was before googling). I’m not sure the difference but we gobbled everything up and had to actually fight over the last slice of avocado to top off our fajita! Coming from a family of 7-thank you! :)

  12. One of my favorite recipes!!!! Very tasty indeed but making the fajitas are a major job. This was my first recipe when I started eating from this database and I remember it took me a good couple of hours to make this meal. Wow!! I really got scared and thought is this really how long it takes to eat good like this. And to think how they did this before kitchens, lol?? The fajitas are worth making if you have the time. I haven’t made them since, I started my real food challenge in May. LOL

      Hi Jessie. Yes, the tortillas can be frozen. I separate each with wax/parchment paper and put them in a ziplock removing as much air as possible. Freeze the meat and veggies in an air tight container. ~Amy

    Made these tonight and they were a huge hit! I thought twice before making them without any sort of beef or chicken, as my husband is a HUGE meat lover. But, since committing to the real-food lifestyle, he was agreeable to try them without meat. I actually put a little twist on them, though… Rather than saute-ing the veggies, I baked them in a glass pan for 20 minutes with a couple tablespoons of olive oil. They came out great with the perfect texture, and I was able to prepare condiments (guacamole, pico, etc.) while it was cooking. Worked out great and tasted great! Thanks for the recipe!

  14. We really like these and I have made them twice in the last couple weeks. Both times I made them without the Serrano Peppers (my kids don’t like heat)and my husband said they were too greasy. The second time, I made them with only one tablespoon of oil (I used coconut oil) and just put the seasonings in, omitting the butter. My husband has no complaints! I love these especially because I’m trying to get us eating less meat and they are delicious!

  15. DELICIOUS!! Our new favorite recipe! The kids gobbled it up. I used green bell pepper, onions, and mushrooms and topped with cheese, cilantro, green onions and sour cream. We used corn tortillas though, due to a gluten allergy. Will be making again very soon!! Is this an original recipe by you??

  16. I made this and the homeade tortillas tonight! They were great! I have had a hard time getting my husband to switch to real food. If I keep making meals like this I will def win him over soon! He made sure to tell me that he gets the leftovers for lunch tomorrow! Love this blog!

  17. Olive oil helps reduce bad cholesterol in your body. It does not bring up the good, but it will help in the bad. I have used it and coconut oil to aid in my cholesterol.

  18. I used the Coconut oil. Just out of curiosity, Is olive oil high in cholesterol? My husband struggles with high cholesterol.

      I honestly haven’t researched foods in relation to elevated cholesterol so I would check with his doctor!

      1. All vegetable oils are cholesterol free. Only foods that are derived from animals contain choleserol.

  19. These sound great. Do you use regular butter since you’re cooking on medium heat or do you still use ghee? I’m just getting acquainted with ghee and not sure when to use it (only high heat?).

      Yes, I use regular butter for this recipe, and I use ghee for those higher heat recipes like when I am making the tortillas. I hope that helps!

  21. OH MY GOODNESS, I made your whole wheat tortillas tonight and they are soooo good! Great texture, so good and chewy. They actually were super easy, not quick, but very easy. The dough is so simple, I love that! The only change I would make is to add a bit of sweetness to the dough, just a touch of honey, maybe 1/4 cup or less. They were so easy to cook and turned out fantastic! Thanks so much for all your wonderful recipes!!
